Instant Pot Haitian Rice And Beans

  • 1 cup Red Kidney Beans
  • 2 ½ cups Jasmine Rice
  • 1 can Coconut Milk (13.5 FL Oz.)
  • ⅓ cup Chopped Onions
  • ¼ cup Haitian Epis (Seasoning) or 1 tbsp. better than bouillon
  • 3 Garlic Cloves chopped
  • 3 Tbsp Olive Oil
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Ground Black Pepper
  • ½ teaspoon Ground Allspice
  • 4 cups Water
  • 2 cups water

Prep

  • Add 4 cups of water and 1 cup kidney beans to the Instant Pot. Cook for 40 minutes on high pressure.
  • Cut 1 onion
  • Cut 3 Garlic Cloves
  • Wash 2 1/2 cups rice

Cook

  1. In the Instant Pot (IP) add 4 cups water and cook the beans for 20 minutes on high pressure; turn the steam release handle to sealing.
  2. Quick release once cooked. Using a strainer, drain the beans.
  3. On the Instant Pot, click on sauté, set timer for 5 minutes.
  4. Cut the onions and garlic. Set aside.
  5. Wash the rice. Set aside.
  6. When the Instant Pot is ready, add the oil, garlic, and onions. Cook for about 1 minute.
  7. Add the beans and stir once. Cook for a couple of minutes.
  8. Add the epis, salt, black pepper, and ground cloves. Stir once.
  9. Add the rice and stir once. Cook for 1 minute.
  10. Add 2 cups of warm water and coconut milk, stir once.
  11. Cover, seal and press the "Rice" setting. Cook for 30 minutes.
  12. Quick release. Fluff and serve warm.
